You will need to toggle to show hidden folders (directions below). Then double click the ipod in my computer and then iPod_Control. Double click music (videos are also in this folder). There should be about 50 folders in "Music." Just copy and paste these onto your new harddrive; it will take a while to transfer. The songs/video are not in any particular order. Also, music/videos that were purchased through iTunes will be identified only by a 4-letter code; ones that you copied from cd or otherwise will retain some of the details.
