There isn't a really good way (Apple doesn't want people sharing between iPods); however, once the iPod is plugged in, go to my computer. You will need to toggle to show hidden folders (directions below). Then double click the ipod in my computer and then iPod_Control. Double click music (videos are also in this folder). There should be about 50 folders in "Music." Just copy and paste these onto your new harddrive; it will take a while to transfer.

The songs/video are not in any particular order. Also, music/videos that were purchased through iTunes will be identified only by a 4-letter code; ones that you copied from cd or otherwise will retain some of the details. You will need to use the Get Info screen in iTunes to clean up the track information.

Unfortunately there isn't an easier way to put things back on the harddrive.

To display hidden files and folders
Open Folder Options in Control Panel.
Click Start, and then click Control Panel.
Double-click Folder Options.
On the View tab, under Hidden files and folders, click Show hidden files and folders.
References :
There are programs that you can buy from apple that can range in price but will do the trick. Other than that I had the same problem and did it for free by typing it into google " how do I get songs off my iPod" but it was a little tricky.
References :
How do you take music and videos off an iPod video after having your hard drive replaced?
With my new hard drive, iTunes recognizes my iPod, but it won't sync with iTunes. All I want to do is put my music/ videos in my library so I can reset my iPod w/o losing everything.
